Egg and Potatoes Stew


Dear Readers, Today Let’s learn Egg and Potatoes Stew. Eggs are good for health. We can make different egg recipes like egg sandwich, fried egg, egg noodles, Egg biryani, chicken egg, mutton egg and egg custard etc. some people like to eat only egg white. Egg gives protein, nutrition and strength to our body. Some likes to take hard boiled eggs with black pepper powder in break fast. Let’s start the recipe.

Ingredients Egg and Potatoes Stew

Eggs                                                      4 or 5

Potatoes                                              200gm

Coconut                                               1 small size

Onions                                                 100gm

Tomatoes                                            100gm

Green chilies                                      5 or 6

Ginger paste                                       Half tbsp

Garlic paste                                         Half tbsp

Pepper powder                                  Half tbsp

Coriander leaves                                1 bunch

Cumin leaves                                      1 bunch

Turmeric powder                               Half spoon

Vinegar                                                To taste 1 or 2 tbsp

Salt                                                       To taste

Oil                                                         10gm

Tempering Ingredients Egg and Potatoes Stew   

Cloves                                                   3 or 4

Cinnamon                                            1” inch

Mustard seeds                                    2 tbsp

Cumin seeds                                        2 tbsp

Small onion                                         1 piece

Curry leaves                                        1 spring

Oil                                                          10gm

Method Egg and Potatoes Stew

Hard boil eggs. Cool in cold water and clean the shells. Cut into halves keep a side. Boil potatoes peel and cut into small pieces. Grind coconut and squeeze milk in clean cloth. Prepare 2 extractions thick and medium. Slice onions and slit green chilies.

Heat oil and fry onions green chilies. Add ginger and garlic paste and fry for sometime. Add medium extraction of coconut milk, pepper powder and potatoes. Cook for sometime then add tomatoes, thick extraction of coconut milk and other all ingredients. Cook for 5 minutes then add vinegar and eggs mix well slowly and remove from fire after 5 minutes of cooking on low heat.

Heat oil in fry pan add mustard seeds and cumin seeds then add curry leaves. When seeds crackled add chopped onions, cinnamon and cloves. Fry onion till light brown then add to stew and mix well.

If desire little rice flour or refined flour mix in cold water and add to stew boil for sometime to thicken the gravy. Egg and Potatoes stew ready to serve. Serve hot.

If someone like more spicy curry they can add red chili powder to gravy. Any vegetable can add in place of potatoes to this recipe as per your taste.
